So what makes Panama's coffee so unique?

Let's begin with a bit of history. Starting in Ethiopia coffee was said to have spread to Egypt and Yemen. The earliest credible evidence of either coffee drinking or knowledge of the coffee tree appears in the middle of the fifteenth century, in the Sufi monasteries of Yemen. It was there in Arabia that coffee beans were first roasted and brewed, in a similar way to how it is now prepared. By the 16th century, it had reached the rest of the Middle East, Persia, Turkey, and Northern Africa. Coffee then spread to Italy, and to the rest of Europe and to the Americas. In many Central and South American countries, their governments offer incentives and subsidiaries to coffee growers to stimulate mass production operations. One example is Brazil, where some large scale operations harvest thier coffee by machine and quantity is preferred over quality.  In many cases the coffee plants were cross-bred to pruce maximum yields while sacrificing quality. Panama's government didn't offer such subsidies and the coffee strains still retain thier purity. That is the main reason the Arabica variety, grown in the highlands of Boquete in the Chiriqui Province of Panama is highly sought after by bidders in auctions, achieving very high prices. The process varies quite a bit from farm to farm but we've got the basics posted below.
